What exactly is sosaku washoku (meaning “creative Japanese cuisine”)? Even after 20 years living in Japan, I’m not sure if I’ve ever had it. After some researching online, it seems to be exactly what the name implies: Japanese food with a creative twist to express the chef’s original ideas.
創作和食とは具体的になにやろ？ネットで調べたら、意味はそのまま：シェフの独創的なアイデアを表現した独創的な日本料理。創作和食の店に行ったことはないと思うけど、創作和食を食べたことあるかもしれん。
